How we offer our beef

We offer our beef based upon the hanging weight of the beef after it has been harvested, but before it is cut and processed after dry aging for the prescribed time. Processing, or butcher's fees, are also based upon the hanging weight. These fees include cutting and wrapping.

Beef Selection Options

Whole

  • Approximate hang weight of 750 lbs.
  • Approximate cut and wrapped weight of 380 lbs.
  • Requires a freezer approximately 14-16 cubic feet.
  • Will supply a family of 6 for 18 months on average.
  • Custom cut and packaged to your specifications.
  • Best value per pound with the most customization options.
  • Includes free delivery.
  • Packaging and billing accommodations can be made for multiple parties.
  • Total cost including all processing fees will be quoted upon request

  • Approximate hang weight of 375 lbs.
  • Approximate cut and wrapped weight of 190 lbs.
  • Requires a freezer approximately 7-8 cubic feet.
  • Will supply a family of 4 for 12 months on average.
  • Custom cut and packaged to your specifications.
  • Includes free delivery.
  • Packaging and billing accommodations can be made for multiple parties.
  • Total cost including all processing fees will be quoted upon request
  • Half Beef Deposit: TBD

  • Approximate cut and wrapped weight of 95 lbs.
  • Requires a freezer approximately 3-5 cubic feet.
  • Will supply a family of 4 for 6 months on average.
  • Limited customization options.
  • Includes free delivery.
  • Total cost including all processing fees will be quoted upon request
  • Quarter Beef Deposit:TBD

*Please Note: a quarter beef must have the same steak cuts as another quarter when being processed and therefore has limited customization options. Please see the beef cuts and sizes page for the cuts included.
